Here’s how to make it.
Ingredients
1 Stick butter softened
2 Tablespoons bacon grease
4 Sprigs chives chopped finely
1 Grated Jalapeno Pepper
Directions
Soften the butter and bacon grease, and mix with the thyme, chives, and grated jalapeƱo. Place in a sheet of plastic wrap and roll up into the shape of a stick of butter. Put it in the refrigerator or freezer to harden back up.
Grill steak on indirect heat as it approaches desired doneness. Move to direct heat and place a pad of Cowboy Butter on top of stake and allow to melt into the meat. Flip and repeat. Remove from heat and allow to rest. Add more Cowboy Butter because life is short. Enjoy
